1. Place crushed or minced garlic (with salt), tahini paste, and lime juice (or lemon juice) to the bowl of a food processor. Blend.
2. Tahini sauce will first get thick as it emulsifies. Add a little bit of water at a time and blend again until you reach the desired consistency similar to salad dressing.
3. Taste and adjust seasoning as needed with more salt or lime juice.

1. Grind tahini paste, lukewarm water, garlic, lemon juice and salt together in a food processor or blender until sauce is creamy and ivory-colored.
2. A food processor is the easiest way to make this sauce; scrape the sides of the processor periodically during processing.
